Spinach Omelet

I am guilty of working so much that I don’t eat correctly. How about you? Here is one of my favorite meals to whip up anytime of the day! It’s a delicious Spinach Omelet that gives your body good nutrition that it needs!

2 Eggs

2 Tablespoons of milk

2 Tablespoons of butter

1/2 Cup chopped spinach

1/4 Cup peppers (any color green, red, orange, yellow)

1/4 Cup chopped onion

Salt and pepper to taste

1/2 Cup of shredded cheese any cheese of choice I use mild cheddar

Additional Ingredient Options: Mushrooms. Kale. Ham. Turkey. Sausage.

I like to make mine on a 2 burner grilled like this one.

Pre-heat griddle on medium heat. Add 2 tablespoons of butter to griddle.

Beat together eggs and milk. Drop mixture on griddle. Add chopped spinach, peppers, onions, and cheese. You can use frozen pepper too, just cook on the griddle off to the side until hot through and add to omelet.

Flip omelet sides in and turn it over to make sure that the egg is completely cooked through and cheese is melted.

Salt and pepper to taste. Top with extra cheese!
